Dunne se propuso explorar formas de aumentar la vida \u00fatil de las raciones de combate y mantener a los soldados a salvo de las enfermedades transmitidas por los alimentos. Dunne investig\u00f3 m\u00e9todos como la radiaci\u00f3n y los pulsos el\u00e9ctricos de alta intensidad (PEF) y, durante esta b\u00fasqueda, se encontr\u00f3 con el procesamiento por alta presi\u00f3n, a\u00fan en desarrollo.<\/p>\n<p>En ese entonces, el Dr. Errol Raghubeer, ahora vicepresidente senior de Ciencia y Tecnolog\u00eda de HPP de Avure, estaba trabajando con HPP como un medio para aumentar la vida \u00fatil sin da\u00f1ar la nutrici\u00f3n o el sabor. Y mientras se usaban m\u00e1quinas que creaban alta presi\u00f3n para proyectos industriales, todav\u00eda no se hab\u00edan construido espec\u00edficamente para tratar alimentos.<\/p>\n<p>La cooperaci\u00f3n entre la industria alimentaria, el gobierno y la industria tecnol\u00f3gica fue clave para el desarrollo de la tecnolog\u00eda HPP. Flow International, ahora Avure Technologies, proporciono la primera m\u00e1quina HPP desarrollada espec\u00edficamente para alimentos para promover la investigaci\u00f3n. Adem\u00e1s, la cooperaci\u00f3n entre entidades tan amplias y variadas como la Universidad Estatal de Oreg\u00f3n, la Universidad Estatal de Ohio, el ej\u00e9rcito de los EEUU, La NASA, el Instituto de Seguridad y Salud Alimentaria y varios procesadores de alimentos importantes, ayud\u00f3 a desarrollar a\u00fan m\u00e1s la tecnolog\u00eda y las aplicaciones.<\/p>\n<p>Como resultado de todo este trabajo, a principios de la d\u00e9cada de los 2000, los pioneros de las empresas alimentarias utilizaban HPP para extender la vida \u00fatil de alimentos refrigerados como guacamole, salsas y carnes listas para el consumo sin aditivos. Y el ej\u00e9rcito encontr\u00f3 una aplicaci\u00f3n para HPP en frutas envasadas para raciones de combate.<\/p>\n<p>A d\u00eda de hoy, HPP se ha consolidado dentro del sector alimentario como una alternativa a los tratamientos t\u00e9rmicos. Los fabricantes, a consecuencia de las exigencias de los consumidores (etiquetas limpias, alimentos naturales etc.), incorporan HPP para extender la vida \u00fatil de sus productos sin el uso de calor ni aditivos.
