In the lab, our food scientists abide by an unwritten rule:<\/p>\n

No matter how loud your stomach rumbles, do not \u2013 under any circumstances \u2013 grab a quick snack from the test kitchen fridge.<\/strong><\/em><\/p><\/blockquote>\n

Why? Because \u201cPeach Mint Mango Chutney \u2013 3\/6\/15 \u2013 Stability & Microbiological Profile Analysis\u201d isn\u2019t meant for consumption.<\/p>\n

Fortunately, at home, those rules don\u2019t apply. So we thought it would be interesting to find out what HPP foods and drinks our food scientists stock in their personal fridges.<\/p>\n

Errol Raghubeer, senior vice president of HPP science and technology<\/strong>
\nHot pepper sauces. Give him a piece of tree bark, and he\u2019ll go to town.<\/p>\n

Bick-Ngoc Phan, director, microbiology and food technology<\/strong>
\nJuices and convenient ready-to-eat meat<\/a>. In the lab, her passion is seafood. At home, cold cuts rule.<\/p>\n

David Peck, senior food scientist<\/strong>
\nGuacamole and juice. David\u2019s a meat guy through and through, but even he can\u2019t resist a good guac. Dare we say it beats mayo on burgers?<\/p>\n

Colleen Galieti, food scientist<\/strong>
\n\u201cI love all natural deli meats. They\u2019re great for lunch and preservative free. And every now and then, I\u2019ll snack on delicious HPP guacamole<\/a>.\u201d<\/p>\n
